Setiap Satuan Pelayanan Pemenuhan Gizi (SPPG) wajib dipimpin oleh seorang chef profesional agar pengelolaan dapur lebih terjamin dari sisi kualitas gizi dan kebersihan.Selain itu, BGN juga memutuskan untuk menghentikan penggunaan produk pabrikan dalam penyajian menu MBG. Kebijakan ini diambil setelah evaluasi menyeluruh pasca kasus keracunan massal yang menimpa ribuan anak sekolah di berbagai daerah.
BGN menekankan bahwa makanan yang disajikan harus berasal dari bahan segar dan diolah langsung oleh dapur SPPG dengan standar operasional yang ketat.
