I Tried Big Sur Coffee’s "Coffee Soup" Recipe (The Cleanest Espresso Ever)
Is "Coffee Soup" the cleanest espresso shot possible? Today I’m testing out the viral recipe from Big Sur Coffee Roasters in China (recently featured by Brian Quan) to see if an ultra-coarse, high-yield shot actually tastes good. We're pulling a massive 1:5 ratio with dual paper filters, zero tamping, and high flow. No crema, tea-like clarity, and incredible flavor notes.
Big Sur Coffee Soup recipe & workflow:
• Dose: 17g
• Yield: 90g (~1:5 ratio)
• Grind size: Very coarse (Setting 9 on Mizen 102mm blind burrs)
• Basket: High-extraction basket
• Filters: Paper filter on the bottom AND top
• Prep: Distribution shaker/funnel, no tamping
• Water temp: 85°C – 86°C
• Flow rate: ~5.5 g/s
Have you tried pulling high-yield espresso soup shots like this, or do you prefer traditional thick espresso with heavy crema? Let me know in the comments!
