再看看老祖宗發明的許多菜色中，也有將剩食變美食的巧思。例如「雞捲」，就是早年農業社會物資匱乏，將「多出來」的菜餚與邊角料集中，利用豆皮包裹後油炸。料理名稱就由多出來「加」捲的台語諧音，變身現在的「雞」捲，搖身成為庶民美食。
無獨有偶，世界各地類似的「剩餘美食」料理還真不少。像是西式麵包布丁、墨西哥玉米片、義式蔬菜湯、西班牙海鮮飯，或是韓式料理的部隊鍋。而你我常常會吃到的炒飯，最初的雛形都是為了消耗前一天沒吃完的隔夜飯與冰箱中剩餘的邊角碎肉、蔥花與蔬菜。相形之下，我們現在常常「眼睛比胃大」的浪費食物，真的要好好反省啊！ Receive SMS online on sms24.me
