Cucumber dosa, also called southekai dose, is a soft and spongy South Indian breakfast. This instant batter uses rice, poha, cucumber, and coconut. No fermentation. I show batter ratio, tawa heat control, oiling, and flip timing for non sticky results. Pair with coconut or coriander chutney.
Ingredients: rice, poha, cucumber, coconut, green chili, ginger, cumin, salt, water, oil or ghee.
Method: soak rinse blend to a thick pour, rest 10 to 15 minutes, pour on medium hot cast iron tawa, drizzle oil, cook covered until porous and set.
