Hari ni Che Nom masak Mee Kari Putih gaya Penang. Kuah dia ringan dan bersih, tapi tetap padu sebab kita padankan dengan sambal tumis udang kering & belacan yang pekat dan wangi. Bila digabungkan dengan mee, bihun, tauhu pok, sayur, udang dan telur rebus — lengkap jadi hidangan yang sangat sedap dan mengenyangkan.

Resipi ni sesuai kalau nak rasa versi mee kari yang tak terlalu berat tapi masih kaya rasa. Sambal boleh buat awal dan simpan sejuk untuk jimat masa.

Tips penting:
1. Tumis sambal sampai pecah minyak.
2. Reneh air rebusan udang 15–20 minit, tapis, baru masuk kuah.
3. Santan biar sederhana supaya kuah maintain ringan.

Bahan Kisar (Blended Ingredients):
– 15–20 tangkai cili kering (15–20 dried chilies)
– 4–5 tangkai cili padi (4–5 bird’s eye chilies)
– 12 biji bawang merah kecil (12 shallots)
– 6 ulas bawang putih (6 cloves garlic)
– 3 sudu besar udang kering (3 tbsp dried shrimp)
– 1 ½ sudu besar serbuk ketumbar (1 ½ tbsp coriander powder)
– 1 sudu kecil serbuk lada putih (1 tsp white pepper powder)
– ½ sudu besar belacan (½ tbsp shrimp paste)
– 4 batang serai (4 stalks lemongrass)
– ½ sudu besar serbuk seasoning (½ tbsp seasoning powder)
– Garam secukup rasa (Salt to taste)
– 1 cawan minyak masak (1 cup cooking oil)

Bahan Air Rebusan (Broth Ingredients):
– 2 liter air (2 litres water)
– Anggaran 1 liter air kelapa (Approx. 1 litre coconut water)
– Kulit & kepala udang – dari 450g udang (Prawn shells & heads – from 450g prawns)
– ¼ cawan minyak masak (¼ cup cooking oil)
– 3 batang serai (3 stalks lemongrass)
– 2 kiub pati ayam (2 chicken stock cubes)
– 1–2 sudu besar gula batu (1–2 tbsp rock sugar)
– Santan (Coconut milk)
– 2 ketul dada ayam (2 chicken breasts)
– Garam secukup rasa (Salt to taste)

Bahan-bahan Lain (Other Ingredients):
– Tauhu pok / tauhu goreng (Fried tofu puffs)
– 1 pek mee kuning (1 pack yellow noodles)
– 300g bihun (300g rice vermicelli)
– 450g udang (dibuang kulit) (450g prawns, peeled)
– Taugeh (Bean sprouts)
– Sayur sawi (Mustard greens)
– Telur rebus (Hard-boiled eggs)
