Oytun Erbaş, 15 Kasım 1978'de İzmir'de doğdu. İlk, orta ve lise öğrenimini İzmir'de tamamladı.
2001 yılında Ege Üniversitesi Tıp Fakültesi'nden ikincilikle mezun oldu.
2001-2012 yılları arasında dahiliye, radyoloji, fizyoloji, deneysel tıp ve nörobilim bölümlerinde araştırma görevlisi olarak çalıştı.
Mayıs 2018'de Fizyoloji ve Deneysel Tıp alanında Doçent, 2023'te Profesör olarak atandı.
Otizm tedavisinde yeni ajanları literatüre kazandırdı. İnflamasyon ve davranış, diyabet ve metabolik sendrom diğer çalışma alanlarıdır.
"EXPERIMENTAL MEDICINE" ve "CEPHALINK" adlı laboratuvarların kurucusudur. JEBMS Dergisi'nin editörüdür.
