National Geographic photographer Matthieu Paley travels to the Waitrose Farm at the Leckford Estate to see how regenerative agriculture takes care of this precious asset through farming. As the only UK supermarket to operate its own working farm, Waitrose is committed to helping farmers transition to regenerative practices by 2030. But what exactly is regenerative farming? At its core, this technique treats soil as a living ecosystem that requires care. In the UK alone, 2 to 3 million tons of topsoil are lost every year, yet depending on the soil type, building just a single centimeter of topsoil can take 400 to 1,000 years. One key practice is the inclusion of something called an herbal ley, a field left to grow a rich mix of plants. These fields become self-sufficient, and even in dry summers, are able to provide food for grazing cows, rebuilding soil beneath the surface.
