Ex pescatore dell’Argentario, Fiorentini porta con sé un’esperienza autentica, maturata in anni trascorsi in mare, dove ha imparato a leggere i ritmi della pesca e a conoscere la biodiversità marina. Il ciclo di appuntamenti è partito con la rituale asta del pesce, format ideato proprio da Fiorentini e diventato negli anni un appuntamento molto amato. L’asta richiama il funzionamento dei mercati ittici tradizionali: il pescato viene suddiviso in lotti e venduto a partire da prezzi d’ingrosso, permettendo ai partecipanti di avvicinarsi in modo diretto e concreto alla materia prima.
