As somebody who almost exclusively plays soulslikes for the boss fights, I would say that the bosses in this are maybe one of the weaker aspects of the game. But even with that in mind, the overall game experience was great and I had a very fun time playing this game. It's a huge step up from the first game, which I also enjoyed. The issues with the bosses were either by design (rooms of basic enemies aren't the most enjoyable), or buggy fights (see Orrem), but the general experience was still very positive. I'd certainly recommend it as a very good soulslike.
My favourite bosses were Malborn Offspring, The Nameless Captive and Sir Isaac. The least enjoyable were Subjugated Guardian, Orrem and unfortunately Zmey. I had my thoughts on the individual bosses in the playlist below.
Oh and with regards to night mode, it unlocks after the Tar Golem. Technically you could skip the first two bosses and go back once you unlock fast travel later, but I feel like that didn't make sense and I just left those two as they were. Everything else was on night mode.
