Roh geschlürft, mit einem Spritzer Zitrone: Austern gelten als Delikatesse – doch sie können weit mehr. Als natürliche Wasserfilter reinigen sie ihre Umgebung im Meer. Aber: Ihr Ökosystem ist bedroht. Die Klimakrise, steigende Temperaturen und die Ausbreitung bestimmter Algen setzen den Austern massiv zu. Dadurch steigt das Risiko für Krankheiten und sogar Vergiftungen – auch bei Menschen, die sie verzehren.
