El resultado es un plato lleno de contrastes: la caballa por un lado y, por otro, un picadillo crujiente, vegetal y refrescante.
Es una forma diferente de comer caballa, con una elaboración sencilla pero un resultado muy vistoso. La clave está en que ninguno de los elementos tape al otro: queremos notar el pescado, pero también la frescura del tomate, el cilantro, la piparra y ese golpe final de lima.
