Mee Goreng Mamak Simple Tapi Padu, Rasa Macam Kat Kedai

Hari ni Che Nom nak kongsi resepi Mee Goreng Mamak yang simple tapi cukup padu rasanya. Kuah tumis dibuat pekat dan sebati dulu, barulah mi kuning masuk dan digaul sampai semua rasa melekat cantik pada mi. Ada rasa pedas berempah, manis sikit, masam hujung dari air asam jawa, lengkap dengan tauhu, telur, kentang, sawi dan tauge.

Resepi ni sesuai sangat untuk sarapan lewat pagi, minum petang, ataupun bila teringin nak makan mee goreng mamak homemade yang rasa macam kat kedai.

BAHAN-BAHAN / INGREDIENTS

BAHASA MELAYU

Bahan kisar:
- 4 ulas bawang putih
- 3 biji bawang merah kecil

Bahan pes / kuah:
- 3 sudu besar cili kisar
- 1 senduk sos cili
- 3 sudu besar sos tomato
- 2 sudu besar sos tiram
- Kicap manis secukup rasa
- 2 sudu besar kicap masin, pilihan
- 2 sudu besar bancuhan air asam jawa
- 1 sudu besar serbuk kari
- 1/2 sudu besar serbuk cili
- Sedikit kicap pekat karamel, untuk warna

Bahan-bahan lain:
- 1 pek mi kuning
- 1 senduk minyak masak
- 3 ketul tauhu
- 3 biji telur
- 1 biji kentang rebus
- 2 pokok sayur sawi
- 1 mangkuk tauge
- Cili merah potong, untuk hiasan
- Bawang goreng, untuk hiasan
- Daun bawang, untuk hiasan

ENGLISH

Blended ingredients:
- 4 cloves garlic
- 3 small shallots

Paste / sauce ingredients:
- 3 tablespoons blended chilli paste
- 1 ladle chilli sauce
- 3 tablespoons tomato sauce
- 2 tablespoons oyster sauce
- Sweet soy sauce, to taste
- 2 tablespoons salty soy sauce, optional
- 2 tablespoons tamarind water mixture
- 1 tablespoon curry powder
- 1/2 tablespoon chilli powder
- A little dark caramel soy sauce, for colour

Other ingredients:
- 1 packet yellow noodles
- 1 ladle cooking oil
- 3 pieces firm tofu
- 3 eggs
- 1 boiled potato
- 2 stalks mustard greens
- 1 bowl bean sprouts
- Sliced red chilli, for garnish
- Fried shallots, for garnish
- Spring onion, for garnish

Tips:
1. Tumis bahan kisar dan cili sampai betul-betul masak supaya rasa mee goreng lebih sedap dan tidak berbau mentah.
2. Jangan rendam atau celur mi kuning terlalu lama supaya mi tidak lembik.
3. Masukkan daun sawi dan tauge di hujung supaya sayur kekal segar dan rangup.
4. Jika mi nampak terlalu kering semasa digaul, tambah sedikit air sahaja.
5. Untuk warna gelap macam mee goreng mamak di kedai, tambah sedikit kicap pekat karamel.
