Biryani, one of India's favourite comfort foods, is now at the centre of a massive alleged tax evasion investigation. Several popular biryani retail chains in southern India are under scrutiny for reportedly suppressing sales worth ₹70,000 crore or nearly $7.7 billion. The Income Tax Department's Hyderabad unit traced the case back to 2019–20 after red flags emerged from restaurant billing software systems. Investigators analysed 177,000 restaurant IDs and processed nearly 60 terabytes of transaction data. Using big data analytics and Artificial Intelligence, including Generative AI tools, officials identified unusual billing gaps and mismatches with tax filings. Sample analysis suggests nearly 27 percent of sales may have been under-reported. The probe, which began in Hyderabad and Vizag, has now expanded nationwide.---
