No vamos a complicarnos: partimos de unas alcachofas ya preparadas y las convertimos en un plato lleno de sabor gracias a los langostinos y a una salsa kimchi que aporta intensidad, acidez, picante y ese toque umami tan especial.La combinación funciona muy bien: la alcachofa tiene una textura suave y un sabor vegetal muy agradecido, los langostinos aportan el punto marinero y la salsa kimchi levanta el conjunto con carácter. Es una receta perfecta para un entrante potente, una cena diferente o un plato para sorprender sin tener que pasar horas en la cocina.
Aquí el kimchi lo usamos en formato salsa, no como col fermentada, para integrarlo mejor en el salteado y conseguir una especie de fondo corto, sabroso y brillante. El resultado es un plato sencillo, pero con mucha personalidad.
Puedes servir estas alcachofas con langostinos solas, como tapa generosa, o acompañarlas con arroz blanco si quieres convertirlas en un plato más completo. Y si te gusta el picante, puedes reforzar la salsa con unas gotas extra al final.

8 alcachofas pequeñas cortadas en mitades
20 langostinos
Una cucharada rasa de alga wakame deshidratada
100 ml. de vino blanco seco
100 ml. de agua
Pimentón picante
Salsa kimchi
Una cebolla
