En esta receta, inspirada en una que les vi a los Hermanos Torres, la asamos, la terminamos en una salsa intensa y brillante de soja, jengibre y otros matices que la convierten en un bocado lleno de umami y la cortamos para darle esa apariencia final de carne

El resultado es este solomillo de berenjena glaseado con soja y jengibre: tierno por dentro, sabroso, jugoso y con una presentación que entra por los ojos.

Una manera diferente de cocinar berenjena, sencilla pero con aspecto de plato de restaurante.

Ingredientes:

Dos berenjenas
80 ml. de salsa de soja
40 ml. de vino blanco seco
Una cucharadita rasa de ajo en polvo
Una cucharadita rasa de jengibre en polvo
Una cucharadita rasa de mostaza de Dijon
Dos cucharadas de miel
Un limón exprimido
Mantequilla
Opcional: comino, hierbas provenzales
