★ INGREDIENTI, DOSI e PROCEDIMENTO:
Uova 360 g (circa 6)
Panna fresca 150 g
Parmigiano grattugiato 50 g
Pancetta dolce a fette 180 g (circa 24 fette)
Timo fresco qb 0,5 g
Sale qb 1 g
Pepe nero qb 0,5 g
In una ciotola sbattete le uova, versate la panna e mescolate con una forchetta. Aggiungete il Parmigiano grattugiato e il timo fresco, quindi amalgamate bene. Per comodità trasferite il composto in una brocca dotata di beccuccio. Foderate ogni spazio di una teglia per muffin con due fette di pancetta, cercando di coprire bene tutto l’interno. Versate il composto negli stampini fino a riempirli per circa due terzi e condite con sale e pepe. Cuocete in forno statico a 180° per 13 minuti, poi passate alla modalità ventilata e proseguite per altri 3 minuti sempre a 180°, fino a ottenere la superficie dorata e la pancetta ben croccante.
