Bahan-bahan:
4 cwn beras, dicuci sehingga air basuhan jernih dan ditus
41โ2 cwn air
Didihkan nasi dalam periuk elektrik sehingga masak.
Bahan-bahan Ayam ungkep:
1 ekor ayam, potong mengikut saiz yang disukai, dicuci dengan perahan limau dan ditus
1 cwn minyak masak
Bahan untuk menumis:
3 cm kayu manis
4 kuntum bunga cengkih
6 butir pelaga
2 kuntum bunga lawang
Bahan-bahan yang dikisar:
20 ulas bawang merah, dikupas dan dicincang
10 ulas bawang putih, dikupas dan dicincang
3 cm halia, dikupas dan dicincang
2 cm lengkuas, dikupas dan dicincang
8 biji buah keras, dicincang
4 btg serai, dititik
4 cwn santan
4โ5 sdm rempah kari daging
1โ2 kpg asam gelugur, dibilas
1โ2 cwn air
3 sdm kicap pekat manis
2 sdm gula Melaka disagat
garam secukup rasa
6 kpg daun limau purut
4 kpg daun salam
2 sdm pes kerisik
1 helai daun kunyit, diracik kasar
Cara membuat:
1. Panaskan minyak dalam kuali dan tumis rempah, bahan yang dikisar dan serai. Goreng sehingga naik bau dan garing.
2. Masukkan ayam dan goreng sehingga ayam mengecut sedikit dan masukkan bahan-bahan lain kecuali pes kerisik dan daun kunyit.
3. Rebus ayam perlahan-lahan menggunakan api yang kecil dan kacau selalu. Apabila ayam hampir masak, masukkan daun kunyit dan kerisik. Masak hingga pecah minyak, ayam empuk dan disaluti dengan kuah.
