Purple ube takes off globally, leaving Filipino farmers racing to catch up
The ube plant, a purple yam indigenous to the Philippines, is fuelling a global craze as it appears in sweets from New York to Paris.But Filipino farmers are struggling to meet rising demand due to limited cultivation on small mountainside plots and increasingly unpredictable climate patterns.
The crop takes 6 to 12 months to grow, and recent seasonal typhoons have damaged harvests. Government support for the industry has dwindled to just $170,000 this year.
