I Found The UK's Shawarma Master!

I travelled to Leeds to meet a Shawarma Master making some of the best Lebanese shawarma in the UK.

In the first episode of Scran Masters, I visit SQEW, a Lebanese shawarma restaurant with locations in Leeds and Manchester, to discover the secrets behind authentic Lebanese shawarma, freshly made saj bread, traditional falafel and some of the best Middle Eastern food in the UK.

From preparing giant shawarma spits and sourcing authentic Lebanese ingredients to perfecting the balance of slow-roasted meat, lamb fat, homemade flatbread, pickles and sauces, I go behind the scenes to find out exactly what makes a great shawarma.

I start by meeting the man behind SQEW, watching how traditional Lebanese saj bread is made from scratch and learning how to assemble the perfect shawarma wrap. Fresh bread, beautifully cooked meat, carefully selected ingredients and traditional techniques that bring the flavours of Lebanon to Yorkshire.

Then I discover how SQEW sources its ingredients, prepares the meat and builds its vertical shawarma spits, using lamb fat to create the flavour, texture and juiciness that make proper Lebanese shawarma so special.

I also try the homemade falafel, learn about the owner's experiences in the Middle East and discover why he believes perfection matters more than profit.

But behind the incredible food is an even more remarkable story.

I learn about the struggles of opening and running an independent restaurant, how SQEW came dangerously close to bankruptcy, and the viral social media moment that helped save the business.

Today, SQEW has restaurants in Leeds and Manchester, bringing authentic Lebanese street food, shawarma wraps, freshly baked saj bread and traditional Middle Eastern flavours to the North of England.

This is the first episode of Scran Masters, my new Only Scrans food documentary series celebrating the chefs, restaurant owners and food obsessives who have dedicated their lives to mastering a particular dish.

From shawarma masters and kebab specialists to pizza makers, bakers and chefs, I'm travelling around the UK to find people who take their craft seriously, understand the techniques behind their food and uncover the stories that make their businesses special.

If you're looking for the best shawarma in Leeds, Lebanese restaurants in Manchester, authentic Middle Eastern street food, homemade falafel, traditional saj bread or want to understand how proper Lebanese shawarma is made, this episode is for you.
