Makanan sederhana dari ketan dan tempe bacem ini tak sekadar menjadi pengganjal perut, tetapi juga bagian dari identitas kuliner Kaliurang.
Salah satu sosok yang berjasa menjaga kelestarian kuliner ini adalah Bu Titik Kuntarini. Lebih dari 40 tahun, ia mendedikasikan hidupnya untuk berjualan jadah tempe. Bermula dari membantu mertuanya sejak masih sekolah, Bu Titik terus menekuni usaha ini hingga kini menjadi salah satu nama yang melekat erat dengan kuliner khas lereng Merapi tersebut.
“Awalnya jadah tempe hanya pelengkap. Tapi lama-kelamaan banyak langganan, dan sampai sekarang tetap eksis,” ujar Bu Titik.
Dibuat dengan resep turun-temurun, jadah tempe mempertahankan cita rasa khasnya. Proses pengolahan yang panjang, mulai dari merendam ketan, mengukus, menumbuk, hingga mengolah tempe bacem dengan bumbu yang meresap, menjadi kunci kelezatannya. Tak heran, makanan ini bisa bertahan lama dan bahkan sering dikirim hingga ke luar kota.
