E la risposta dei baresi, inevitabilmente, non si fa attendere. A Bari, infatti, il polpo crudo non è certo una moda dell’estate 2026. È uno dei simboli della tradizione gastronomica cittadina: quello di scoglio viene pescato, battuto, «arricciato» e consumato crudo, spesso direttamente sul mare. Bassetti, però, mette al centro la questione sanitaria.
