안녕하세요 애정입니다😊오늘은 겨울철 별미! 알도루묵 구이를 준비했어요!
도루묵은 살도 맛있지만 역시 알이 꽉 찬 알도루묵이 별미잖아요!
특히 알을 씹을 때마다 입안에서
톡톡 터지는 식감이 매력적인 생선인데요!
그런데 저는 개인적으로 도루묵 알 특유의
끈적끈적한 점액질이 조금 거북하게 느껴지더라구요
알이 톡톡 터지는 식감은 좋은데
입안에 남는 미끈거리고 끈적한 느낌은 제 취향이 아니었어요
그래서 이번에는 평소보다 조금 더 바싹하게 구워봤답니다!
에어프라이어 180도에서 약 35~40분 정도 구워줬어요!🔥
사실 기름을 넉넉하게 두른 프라이팬에
노릇노릇하게 구우면 고소한 풍미도 더 살아나고 훨씬 맛있긴 해요!
하지만 도루묵은 살이 워낙 연해서 뒤집을 때마다 쉽게 부서지고
알까지 터져 나오는 경우가 있어서
에어프라이어에 굽는 방법이 가장 편하고 괜찮았어요!
확실히 바싹하게 구우니까 겉은 노릇노릇하고
고소한 맛이 살아나면서 알도 조금 더 단단하고
쫀득한 식감으로 즐길 수 있었어요!
특히 알도루묵은 알이 입안에서 한꺼번에 터질 때
그 특유의 식감이 정말 독특해요! 작은 알갱이들이
오도독 씹히는 느낌인데 다른 생선알과는 또 다른 매력이 있답니다
물론 너무 오래 구우면 살이 마르거나 알이 딱딱해질 수 있으니
도루묵 크기와 에어프라이어 상태에 맞춰 조절해 주시면 좋을 것 같아요!
