Bahan Kari Kepala Ikan Jenahak (Malay)
Bahan Kari:
- 2 kepala ikan jenahak
- 1 cawan minyak masak
- ½ sudu besar halba campur
- 2 tangkai daun kari
- 2–3 tangkai cili kering
- 1 biji bawang merah besar
- 5 ulas bawang putih
- 1 inci halia
- 1 biji tomato (untuk menumis)
- Air secukupnya (untuk masak rempah & kuah)
- ½ sudu besar serbuk atau biji kas-kas (digiling jadi pes kalau guna biji)
- 2 tangkai cili besar hijau
- 1–2 biji terung bulat
- Garam secukup rasa
- Serbuk perasa (jika suka)
- 3 biji tomato (untuk kuah)
- Air asam jawa
- 3–4 sudu besar santan kotak
- Daun ketumbar (hiasan)
Campuran Rempah:
- 4 sudu besar rempah kari ikan
- 1 sudu besar serbuk cili
- ½ sudu besar serbuk jintan manis
- ½ sudu besar serbuk ketumbar
- 1 sudu kecil serbuk kunyit
🐟 Fish Head Curry Ingredients (English)
For the Curry:
- 2 red snapper heads
- 1 cup cooking oil
- ½ tbsp fenugreek mix (halba campur)
- 2 sprigs curry leaves
- 2–3 dried chillies
- 1 large red onion
- 5 cloves garlic
- 1 inch ginger
- 1 tomato (for sautéing)
- Water as needed (to cook spices & curry gravy)
- ½ tbsp poppy seeds or poppy seed powder (grind into paste if using seeds)
- 2 green chillies
- 1–2 round eggplants
- Salt to taste
- Seasoning powder (optional)
- 3 tomatoes (for the gravy)
- Tamarind juice (asam jawa water)
- 3–4 tbsp coconut milk
- Coriander leaves (for garnish)
Spice Mix:
- 4 tbsp fish curry powder
- 1 tbsp chilli powder
- ½ tbsp fennel powder
- ½ tbsp coriander powder
- 1 tsp turmeric powder
