Udržitelnost jako přirozená cesta, ne ideologie.Šéfkuchař Martin Štangl ukazuje, že skutečně udržitelná gastronomie nevzniká díky certifikátům, ale díky každodenním rozhodnutím v práci se sezónní surovinou, v péči o tým i v dlouhodobých vztazích s dodavateli. Restaurace je podle něj ekosystém, který musí fungovat ekonomicky, lidsky i ekologicky. Udržitelnost není cíl, ale cesta. A začít se dá kdykoliv. Hned po škole prošel několika předními pražskými restauracemi, nejvíce ho však ovlivnila zkušenost v michelinské La Degustation Bohême Bourgeoise, kde se během osmi let vypracoval až na pozici sous-chefa. V roce 2015 dostal příležitost podílet se na otevření karlínské Esky a z pozice šéfkuchaře zde naplno rozvíjet své představy o moderní české kuchyni, která respektuje tradici i sezonu. Od léta 2023 stojí v čele zážitkové restaurace Štangl, kde hosté ochutnávají to, co právě nabízí příroda. Od prosince 2025 je restaurace držitelem jedné michelinské hvězdy a také zelené hvězdy, která se uděluje podnikům za důsledný přístup k udržitelnosti.
Martin má rád bylinky – především ty divoké –, staré odrůdy i zapomenuté recepty našich (pra)babiček. Velkou část inspirace nachází v přírodě – za tou se před lety odstěhoval z Prahy 1 na Sázavu, kde společně se svou ženou vede penzion.
