Sempena musim daging korban ni, jom tengok Che Nom share resepi Gulai Daging Kawah ala kenduri. Kalau sebelah utara gulai ni kuah kari merah, jangan confuse dengan gulai kuah kuning ye.Sebab ada banyak daging, dan kebetulan ada daging bahagian yang bukan prime cut iaitu bahagian yang keras dan agak liat jadi sesuai lah kalau kita buat masakan berkuah.
Kita reneh perlahan-lahan sampai daging meresap dengan kauh, dan masak lembut. Gulai daging ni bg Che Nom kurang sesuai kalau pakai daging batang pinang. Yang banyak urat tu lebih sedap dan tak kering bila kita masak lama, juga ‘full of flavour’. Resepi ni menghasilkan gula kawah yang sedap, wangi, pekat dan cukup berlemak dgn santan segar & kerisik juga home made. Cara nak buat kerisik pun ada di video.

Bahan-bahan:
1 kilo daging
1 cwn minyak masak
Rempah 4 sekawan
2-3 tangkai daun kari
1 helai daun pandan
1 biji bawang besar
4 sb serbuk kari daging
2 sb cili kisar
2-3 cwn santan cair
ATAU air biasa
1 keping asam gelugor
2 sb kerisik
3-4 biji kentang
1/2 sb gula melaka
Garam secukup rasa
2 cwn santan (dari 1/2 biji kelapa)
ATAU 1 kotak kecil santan segera
Bahan-bahan kisar halus:
6-7 biji bawang merah kecil
3 ulas bawang putih
1 ketul kunyit hidup
1 inci halia
1 inci lengkuas

1 cup cooking oil
4 types of spices
2-3 stalks curry leaves
1 pandan leaf
1 red onion
4 tbsp meat curry powder
2 tbsp ground chili
2-3 cups light coconut milk
OR water
1 piece tamarind slice
2 tbsp toasted coconut paste
3-4 potatoes
1/2 tbsp palm sugar
Salt to taste
2 cups coconut milk (from 1/2 coconut)
OR 1 small box of instant coconut milk
Finely ground ingredients:
6-7 shallots
3 cloves garlic
1 piece turmeric
1 inch ginger
1 inch galangal
