Bahan-Bahan:
Tart:
Marjerin 100 gram
Mentega tanpa garam 100 gram
Gula 160 gram
Telur 65 gram
Tepung Serbaguna 400 gram
Cara-Cara:
Campurkan marjerin, mentega dan gula pada kelajuan 1 selama 1 minit dan kelajuan 3 selama 3 minit.
Masukkan telur secara perlahan-lahan selama 3 minit pada kelajuan 3.
Masukkan tepung pada kelajuan 1 selama 30 saat sehingga adunan sebati.
Timbang 50g adunan dan letakkan dalam acuan aluminium foil.
Bakar pada suhu 190°C selama beberapa minit.
Durian Kastard:
Tepung Jagung 15 gram
Krim Putar 50 gram
Susu 70 gram
Telur 110 gram
Garam 1 gram
Gula 50 gram
Dektrosa 25 gram
Purée Durian 167 gram
Cara-Cara:
Ayak tepung jagung ke dalam telur dan kacau dengan tangan.
Campurkan krim putar, susu, garam, gula, dektrosa dan masak sehingga panas. Kemudian masukkan purée durian ke dalam pengisar.
Tuang campuran durian panas ke dalam campuran telur dan masak sehingga pekat dalam Bain Marie.
Bakar kulit tart terlebih dahulu dan letakkan sehiris kek span nipis.
Dengan menggunakan beg paip berbentuk bintang, paipkan durian kastard ke atasnya. Hiaskan dengan krim segar berwarna hijau muda.
