Ingredients

For the dough:

* 700–750 g all-purpose flour
* 250 ml warm milk
* 7 g dry yeast
* 100 g melted butter
* 150 g sour cream
* 1 egg
* 1 tbsp sugar
* ½ tsp salt

For the nut filling:

* 250 g walnuts
* 200 g hazelnuts
* 200 g almonds
* 450–500 g sugar
* 1–1½ tsp ground cardamom

For assembling and decorating:

* 250 g melted butter 🧈
* 1 egg yolk
* A little saffron infusion
* Whole almonds, hazelnuts, and walnut halves 🌰

For the syrup:

* 200 g sugar
* 150 ml water
* 150 g honey 🍯
* A little saffron infusion

Instruction 👩‍🍳

1. Dissolve the yeast and sugar in the warm milk and leave for 10 minutes. Add the egg, sour cream, melted butter, and salt.

2. Gradually add the flour and knead until you have a soft, smooth dough. Cover and leave it in a warm place for about 1 hour.

3. Coarsely grind the walnuts, hazelnuts, and almonds. Mix them with the sugar and cardamom.

4. Divide the dough into 10–12 pieces. Make the pieces for the bottom and top layers slightly larger.

5. Roll out the first piece and place it in a greased baking tray. Brush it with melted butter. Continue adding thin layers of dough, brushing each layer with butter and spreading the mixed nut filling evenly between the layers.

6. Cover with the final layer of dough and seal the edges. Brush the top with egg yolk mixed with saffron infusion.

7. Cut the baklava into traditional diamond-shaped pieces. Decorate the pieces with whole almonds, hazelnuts, and walnut halves. ✨

8. Bake at 350°F (180°C) for 15 minutes. Remove the tray and pour the remaining melted butter along the cut lines.

9. Return the baklava to the oven and bake for another 25–30 minutes, until beautifully golden brown.

10. To make the syrup, boil the sugar and water for 5 minutes. Remove from the heat, then add the honey and saffron infusion.

11. Pour the warm syrup over the hot baklava, especially along the cut lines. Return it to the oven for another 5 minutes.

12. Allow the baklava to cool completely and rest for several hours before serving. This helps the layers absorb the syrup and develop a rich, delicious nutty flavor. 😋
